Bianca Roffee

Bianca comes from a long line of chefs, but she knew early on that she didn’t want the intense, high-stress lifestyle that came with working in a restaurant kitchen. Watching her parents work late nights and burn out during rushes made it clear that path wasn’t for her. Still, she inherited their love of food. Baking gave her the quiet, creative space she craved, and eventually, she opened her own cozy bakery, known around town for her perfect lemon bars.

Lately, though, business has slowed. A sleek new dessert shop opened just down the street and Bianca can’t help but feel like her simple, handmade approach might not be enough anymore. With bills to pay and regulars slowly drifting away, she’s started offering one-on-one baking mentorships to make up for the lost income. But behind the cheerful demure, she’s quietly wondering if her dream is still sustainable or if staying small means getting left behind.
